Broccoli with Feta Cheese and Red Pepper



It's easy to dismiss broccoli as bland and uninteresting to eat.  It's also easy to dismiss any cheese broccoli recipe as being unhealthy.  Well, this recipe not only is tastey, but also fits in well to any clean eating plan. Note that just becaues there is cheese in this cheese broccoli recipe doesn't mean that you layer it on thick.  Note the limited amount of cheese and you won't see it turn up on your butt later.

Serves 4

4 cups chopped broccoli florets and 2 inch stalk pieces
2 tsp. olive oil
2 tsp. crushed garlic
¾ cup diced onion
½ cup diced red pepper
1/3 cup sliced black olives
1 cup diced tomatoes
2 Tbl. chicken stock or water
1 tsp. dried oregano (or 2 Tbl. chopped fresh)
1 ½ oz. feta cheese, crumbled

1. Steam or microwave broccoli just until barely tender. Rinse under cold water, drain, and set aside.
2. In nonstick skillet, heat olive oil. Over medium heat, saute garlic and onion just until softened, approximately 3 minutes. Add broccoli, red pepper, olives, tomatoes, chicken stock and oregano. Cook for 3 minutes. Place in serving dish and top with feta cheese.

Tip: For a fresh change, substitute asparagus or green beans for the broccoli and goat cheese for the feta.
