Fresh Mexican Salsa
Fresh Mexican salsa is so quick and easy (and deelish!), you’ll never reach for the store bought stuff again. Salsa recipes with fresh tomatoes are great for your healthy eating plan, but you'll often find lots of sodium or preservatives in their ingredients. This fresh mexican salsa is made of clean foods that tastes great with pita chips, eggs, meat or whatever else fits into your meal plan.
3-4 large tomatoes, seeded, diced (You can also substitute a 28 ounce can of diced tomatoes, drained of the juice, but you may need to up the ante on the following ingredients to balance the flavors.)
½ cup purple onion, diced
One large bunch of cilantro, chopped fine
2 Tablespoons lemon or lime juice
2 cloves garlic, minced
Hot sauce, to taste (I love Frank's Red Hot Sauce)
Salt and pepper, to taste
In a medium sized mixing bowl, combine all ingredients and adjust the seasonings to your liking. Serve alongside pita chips or on top of your scrambled egg whites. Yum!
