Mango Watermelon Salsa

Here is a favourite of mine. Any recipe with salsa is a recipe I love. However, here's a new twist on salsa that's a great healthy topping on foods from chicken to eggs.

I'll go as far to say that this is THE BEST fruit salsa you’ve ever tasted. You will impress everyone with this tasty treat, but beware: leftovers are not in your future! Serve it alongside chicken, fish, pork, baked pita wedges or swap it for dressing on your salad greens or tuna. Makes about 2 cups.


1 large ripe mango, diced
1 cup watermelon, diced
½ red pepper, diced
¼ cup purple onion, diced
Bunch (1/8 cup) cilantro, chopped fine
1 Tbl. lime juice
1 tsp. vinegar (can use white, red wine, apple cider or rice wine)
Sea salt and pepper to taste

Combine all ingredients in a bowl and stir to combine. This is a really versatile dish. You can substitute strawberries or pineapple for the watermelon and it will still be deelish.

This healthy topping is fun to experiment with other foods, so be creative.  Use it with any recipe with salsa or find your own food love connection.  This adds pizazz to a number of dishes that need a little something.
