Sweet Baked Potato Chips

Get those white potatoes out of your pantry!  This recipe for Sweet Baked Potato Chips packs a punch of Vitamin A, Vitamin C, manganese, copper, fiber, B-6, iron and potassium.  It is also revered for its anti-oxidant and anti-inflammatory properties.  (That's why you feel so good when you eat them)!  Not to mention, they serve as an excellent substitute for regular chips and will help you scratch that crispy craving you get when watching the game with friends.

1 lb. sweet potatoes, pared, sliced 1/4 inch thick

1/2 tsp. sugar

1/4 tsp. + 1/2 tsp (reserved) sea or kosher salt

1/2 tsp. black pepper

In medium bowl, pour ice water over potatoes to cover, stir in sugar and 1/4 teaspoon of the salt.  Let stand 30 minutes.  Preheat oven to 350 degrees.  Spray two baking sheets with Pam; set aside.  Drain potatoes, blot dry and place on baking sheets in a single layer.  Bate 35-40 minutes, turning the potato slices over frequently to crisp evenly.  Remove from oven and sprinkle with remaining salt and pepper to taste.  Serves 4.
